minutesIngredients
- Salmon and Asparagus
2 lb Salmon fillet, sliced into six fairly equal portions
2 lbs Asparagus
1 tbsp Olive oil
1 Lemon, sliced into rings
- Herbed Butter
1 stick of butter (8 tbsp), softened
2 tbsp lemon juice
2 cloves of garlic, minced
1 tsp Worcestershire sauce
2 tbsp chopped parsley
2 tbsp chopped basil
Directions
- Prep work
- Preheat the oven to 450°F (230°C) and position the rack in the upper third of the oven.
- Line a large baking sheet with parchment paper. Careful not to have a lot of overhang.
- Cooking Instructions
- In a small bowl, thoroughly combine all the flavored butter ingredients, mashing and stirring until the lemon juice is fully incorporated into the butter. Set aside.
- Place the sliced salmon fillet, skin-side down, in the center of the prepared baking sheet.
- Rinse the asparagus and break off the woody ends by grasping the base and snapping it where it naturally breaks. Arrange the asparagus around the salmon.
- Drizzle the asparagus lightly with olive oil and roll it around to coat it evenly.
- Spread ¾ of the butter mixture over the salmon, ensuring an even coating.
- Dot the remaining herb butter on top of the asparagus.
- Scatter lemon slices over the salmon and asparagus.
- Bake the fish and vegetables for 10-12 minutes at 450°F (230°C).
- After baking, switch the oven to broil on high and broil for 2-3 minutes to give the salmon a golden, crispy surface.
- Continue baking until the salmon is cooked through and flakes easily, indicating it’s done.
Notes
- When available, I prefer to buy fresh skinless salmon filets.
- Fresh chopped herbs are always best, but when not available you can substitute dried.
